JAMAICAN KITCHEN
Jamaican
cuisine, like Jamaican
culture, is distinctive,
going well
beyond
the contact between the
West African, British,
and Carib cultures
from
which it initially
emerged. The culinary
palette brings together
the
extremes:
peppery, fiery heat and
rich sweetness, bold
flavor, mild
tempering
items. In this class,
students will be
introduced to the
fundamentals of Jamaican
cooking as they prepare
together a menu that
builds on
the basics of Jamaican
cuisine.
Three
sessions will be
offered: one in
February, one in March,
one in
April.
We will
prepare and share a
meal, and students will
prepare one item to
take
